  • ¼ cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 3 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your 9×5 inch loaf pan with butter or non-stick spray.
  3. In a mixing bowl, combine the flour, baking soda, salt, cinnamon, and ginger. Whisk these together until well blended.
  4. In another bowl, mix together the eggs, brown sugar, white sugar, vegetable oil, sour cream, and vanilla extract. Whisk until smooth.
  5. Gently fold in the chopped apples into the wet mixture.
  6. Gradually add your dry ingredients to the wet mixture. Stir using a rubber spatula until just combined; do not overmix.
