  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a 9” square baking dish and line it with parchment paper.
  2. In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Combine hot cider with diced butter until melted.
  3. In a medium bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Gradually whisk in the reduced cider mixture until well combined.
  5. Gently fold in the flour until just combined; avoid overmixing.
  6. Pour the batter into the prepared dish and bake for 22–25 minutes or until golden and set.
  7. Cool for about 5 minutes before brushing with butter and sprinkling with cinnamon sugar.
