  • 8 oz cream cheese, room temperature
  • ½ cup + 2 tablespoons unsalted butter, room temperature
  • ¾ cup sugar
  • 1 large egg, room temperature
  • 1 ½ teaspoons vanilla
  • about ¾ cup Lotus Biscoff (Speculoos) cookie crumbs
  • 2 medium apples, peeled and diced in small pieces
  • 1 tablespoon lemon juice
  • ¼ cup light brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
  • 1 tablespoon corn starch
  • 2 tablespoons water (or more if needed)
  • 1/3 cup caramel sauce for serving

Instructions

  1. Prepare apple filling by cooking diced apples with brown sugar, lemon juice, spices, and cornstarch until softened. Set aside to cool.
  2. In a mixing bowl, combine flour, baking powder, and salt. In another bowl, beat cream cheese and butter until smooth. Add sugar and egg; mix well.
  3. Gradually incorporate the flour mixture into the wet ingredients until just combined. Chill dough for at least one hour.
  4. Preheat oven to 350°F. Roll chilled dough into balls; coat with Biscoff crumbs before placing on baking sheets.
  5. Create indents in each ball and fill with cooled apple pie filling. Bake for 15–18 minutes until golden brown.
