- ¾ cup (170 g) unsalted butter
- ¾ cup (150 g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ½ cup (122.5 g) whole milk
- 2 ounces cream cheese
- ½ cup (100 g) granulated sugar
- 2 cups (476 g) heavy cream
- ½ teaspoon vanilla extract
- 1 pinch kosher salt
Instructions
- Prepare the apple filling by cooking diced apples with butter, sugar, lemon juice, cinnamon, salt, and flour until slightly softened. Let cool.
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Mix together dry ingredients in one bowl; in another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract and milk.
- Combine the wet and dry ingredients until just mixed. Fill each liner halfway with batter, add apple filling, then cover with more batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- For the frosting, beat cream cheese until smooth, gradually add sugar while mixing in heavy cream until stiff peaks form. Frost cooled cupcakes generously.
