Description

Apple Pie Cupcakes are a delightful fusion of classic apple pie flavors and the convenience of individual cupcakes.


Ingredients

  • 3 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon ground cinnamon

  • 2 tablespoons unsalted butter
  • 2 teaspoons all-purpose flour
  • 1 ½ cups (187.5 g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ cup (170 g) unsalted butter
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup (122.5 g) whole milk
  • 2 ounces cream cheese
  • ½ cup (100 g) granulated sugar
  • 2 cups (476 g) heavy cream
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt

Instructions

  1. Prepare the apple filling by cooking diced apples with butter, sugar, lemon juice, cinnamon, salt, and flour until slightly softened. Let cool.
  2. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. Mix together dry ingredients in one bowl; in another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract and milk.
  4. Combine the wet and dry ingredients until just mixed. Fill each liner halfway with batter, add apple filling, then cover with more batter.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. For the frosting, beat cream cheese until smooth, gradually add sugar while mixing in heavy cream until stiff peaks form. Frost cooled cupcakes generously.
