  • 1 cup red wine (plus 1/4 cup)
  • 4 beef short ribs
  • 1 pound Italian sausage (cooked and drained)
  • 1 large onion (chopped)
  • 6 garlic cloves (minced)
  • 2 cans whole peeled tomatoes (28 ounces each)
  • 1 can tomato paste (6 ounces)
  • 1 can tomato sauce (28 ounces)
  • 2 cups beef broth
  • ¼ cup extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • ¼ cup chopped fresh Italian parsley

Instructions

  1. Preheat the oven to 400°F. In a roasting pan, combine red wine, olive oil, beef short ribs, onion, garlic, salt, and black pepper. Stir to coat.
  2. Roast in the oven for about 1 hour and 30 minutes until the beef is browned and tender.
  3. Transfer the mixture to a stockpot over medium-low heat. Add the remaining red wine and simmer gently for 30 minutes.
  4. Stir in tomatoes (whole peeled tomatoes, tomato paste, tomato sauce), beef broth, dried basil, oregano, and parsley. Simmer uncovered for 4 to 6 hours.
  5. Remove short ribs and add cooked sausage; simmer for an additional hour.
  6. Serve over your favorite pasta.
