Ingredients
- 1 cup red wine (plus 1/4 cup)
- 4 beef short ribs
- 1 pound Italian sausage (cooked and drained)
- 1 large onion (chopped)
- 6 garlic cloves (minced)
- 2 cans whole peeled tomatoes (28 ounces each)
- 1 can tomato paste (6 ounces)
- 1 can tomato sauce (28 ounces)
- 2 cups beef broth
- ¼ cup extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- ¼ cup chopped fresh Italian parsley
Instructions
- Preheat the oven to 400°F. In a roasting pan, combine red wine, olive oil, beef short ribs, onion, garlic, salt, and black pepper. Stir to coat.
- Roast in the oven for about 1 hour and 30 minutes until the beef is browned and tender.
- Transfer the mixture to a stockpot over medium-low heat. Add the remaining red wine and simmer gently for 30 minutes.
- Stir in tomatoes (whole peeled tomatoes, tomato paste, tomato sauce), beef broth, dried basil, oregano, and parsley. Simmer uncovered for 4 to 6 hours.
- Remove short ribs and add cooked sausage; simmer for an additional hour.
- Serve over your favorite pasta.
