  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 cucumber, diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup fresh salsa (store-bought or homemade)
  • Optional: 2 cups mixed greens for serving

Instructions

  1. In a skillet over medium heat, add olive oil. Once heated, season the shrimp with garlic powder, salt, and pepper. Cook for about 3–4 minutes on each side until pink and opaque. Remove from heat.
  2. While the shrimp cooks, prepare the vegetables: dice avocados, halve cherry tomatoes, chop red onion finely, and dice cucumber. Combine these in a mixing bowl with cilantro.
  3. Add cooked shrimp to the vegetable mixture along with fresh salsa and lime juice. Gently toss until well combined.
  4. Serve immediately on a bed of mixed greens if desired.
