  • 1 (12-14 ounce) loaf French bread, sourdough bread, or challah
  • 8 ounces full-fat brick cream cheese, softened
  • 2 Tablespoons confectioners’ sugar
  • 3 teaspoons pure vanilla extract, divided
  • 8 large eggs
  • 2 and 1/4 cups whole milk
  • 3/4 teaspoon ground cinnamon
  • 2/3 cup packed light brown sugar
  • 1/3 cup packed light brown sugar
  • 1/3 cup all-purpose flour (spooned & leveled)
  • 1/2 teaspoon ground cinnamon
  • 6 Tablespoons unsalted butter, cold and cubed
  • optional: maple syrup and/or confectioners’ sugar for topping

Instructions

  1. Preheat your oven to 350°F (177°C). Grease a 9×13-inch baking pan with nonstick spray.
  2. Cut the bread into cubes and layer half in the prepared pan.
  3. In a mixer, beat cream cheese until smooth; add confectioners' sugar and some vanilla, mixing until combined. Drop spoonfuls over the bread layer and top with remaining bread cubes.
  4. Whisk together eggs, milk, remaining vanilla, cinnamon, and brown sugar until smooth; pour over the bread layers. Cover and refrigerate for at least 3 hours or overnight.
  5. Prepare the crumble topping by combining brown sugar, flour, cinnamon, and butter until crumbly; sprinkle over the casserole.
  6. Bake uncovered for 45–55 minutes until golden brown on top.
