Ingredients
- 2 large baking potatoes
- 1 block (200g) feta cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
- 1 head of garlic (top cut off)
- 1 lemon (quartered)
- 1 tbsp honey
- ΒΌ cup (20g) fresh basil
Instructions
- Preheat the oven to 200C | 390F.
- Wash and cube the baking potatoes. Par-boil in water for 6β8 minutes until slightly tender, then drain and let steam dry.
- Toss par-boiled potatoes in a baking dish with olive oil, thyme, oregano, salt, pepper, and chili flakes.
- Roast for 30β40 minutes until golden brown.
- Add feta cheese and squeeze half a lemon over it before returning to the oven for an additional 15 minutes.
- Squeeze roasted garlic into a bowl and mash it; mix with remaining lemon juice and fresh basil into the potatoes after roasting.
- Drizzle with honey before serving warm.
