Ingredients

  • 2 large baking potatoes
  • 1 block (200g) feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon (quartered)
  • 1 tbsp honey
  • ΒΌ cup (20g) fresh basil

Instructions

  1. Preheat the oven to 200C | 390F.
  2. Wash and cube the baking potatoes. Par-boil in water for 6–8 minutes until slightly tender, then drain and let steam dry.
  3. Toss par-boiled potatoes in a baking dish with olive oil, thyme, oregano, salt, pepper, and chili flakes.
  4. Roast for 30–40 minutes until golden brown.
  5. Add feta cheese and squeeze half a lemon over it before returning to the oven for an additional 15 minutes.
  6. Squeeze roasted garlic into a bowl and mash it; mix with remaining lemon juice and fresh basil into the potatoes after roasting.
  7. Drizzle with honey before serving warm.
