  • 12 slices of bread
  • 4 large eggs
  • 1 cup milk
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple extract
  • 1½ teaspoons cinnamon
  • ¼ teaspoon grated nutmeg

Instructions

  1. Preheat your oven to 350°F and spray a muffin tin with non-stick spray.
  2. Cut the bread into 1-inch cubes and set aside.
  3. In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, vanilla extract, maple extract, cinnamon (reserve some for topping), and nutmeg until smooth.
  4. Gently fold in the bread cubes until coated and let sit for 5 minutes.

  6. In a separate bowl, mix granulated sugar with reserved cinnamon and sprinkle it over each muffin.
