  • 1 teaspoon olive oil
  • ½ cup sliced red onions
  • 2 cups cooked chicken breast (shredded)
  • ½ cup BBQ sauce
  • 2 large tortillas (1012 inch size)
  • 2 tablespoons butter (room temperature)
  • 2 cups shredded cheddar-jack cheese
  • Optional toppings: cilantro, sour cream, guacamole

Instructions

  1. In a skillet over medium heat, warm the olive oil and sauté the sliced onions until softened (about 5 minutes). Add shredded chicken and BBQ sauce; stir until well mixed and remove from heat.
  2. Butter one side of each tortilla. In another skillet over medium heat, place one tortilla butter side down.
  3. Add ¼ cup shredded cheese to half of the tortilla followed by half of the chicken mixture and another ¼ cup cheese. Fold the tortilla in half.
  4. Cook until golden brown on both sides, flipping gently with a spatula.
  5. Transfer to a cutting board or wire rack. Cut into wedges and serve with your choice of optional toppings.
