Ingredients
- 1 teaspoon olive oil
- ½ cup sliced red onions
- 2 cups cooked chicken breast (shredded)
- ½ cup BBQ sauce
- 2 large tortillas (10–12 inch size)
- 2 tablespoons butter (room temperature)
- 2 cups shredded cheddar-jack cheese
- Optional toppings: cilantro, sour cream, guacamole
Instructions
- In a skillet over medium heat, warm the olive oil and sauté the sliced onions until softened (about 5 minutes). Add shredded chicken and BBQ sauce; stir until well mixed and remove from heat.
- Butter one side of each tortilla. In another skillet over medium heat, place one tortilla butter side down.
- Add ¼ cup shredded cheese to half of the tortilla followed by half of the chicken mixture and another ¼ cup cheese. Fold the tortilla in half.
- Cook until golden brown on both sides, flipping gently with a spatula.
- Transfer to a cutting board or wire rack. Cut into wedges and serve with your choice of optional toppings.
