Ingredients
- 2 medium sweet potatoes
- 1 large yellow onion
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
- 1 medium head broccoli
- Salt
- Garlic powder
- Chipotle powder
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop the sweet potatoes into 1/2" chunks and chop the onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a sheet pan.
- Roast veggies for 20 minutes.
- Add broccoli to the pan, toss with olive oil and salt, then place chicken breasts on top and brush with BBQ sauce.
- Bake for an additional 15-20 minutes until chicken reaches an internal temperature of 165°F.
- Shred chicken with forks, mix with remaining sauce, and serve in bowls.
