  • 2–3 lbs boneless skinless chicken thighs or breasts
  • 1 cup barbecue sauce (divided)
  • 1/2 cup chicken broth
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1 onion (diced)
  • 2 cloves garlic (minced)

Instructions

  1. Pat the chicken dry and season with the spice blend. Let rest for 10 minutes.
  2. Add chicken broth to the Instant Pot. Layer the seasoned chicken on top with half of the barbecue sauce, onion, garlic, brown sugar, and apple cider vinegar.
  3. Seal the lid and cook on high pressure for 15 minutes for thighs or 12 minutes for breasts.
  4. Allow natural pressure release for 10 minutes before quick releasing any remaining steam.
  5. Remove the chicken and shred it after resting for about 5 minutes. Mix in remaining barbecue sauce and sauté for an additional 2–3 minutes.
