  • 2 pounds cubed beef chuck
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 sticks celery
  • 6 cloves garlic
  • 1 cup dry red wine
  • 3 cups beef broth
  • 1 pound Yukon Gold potatoes
  • 4 medium carrots
  • Salt & pepper to taste

Instructions

  1. Prep all ingredients; chop vegetables just before cooking.
  2. Dredge cubed beef in flour and shake off excess.
  3. In a Dutch oven, heat olive oil over medium-high heat and sear beef in batches until browned. Set aside.
  4. Sauté chopped onions and celery in the same pot until softened.
  5. Stir in minced garlic and tomato paste; cook for 1–2 minutes.
  6. Add red wine, broth, Worcestershire sauce, Italian seasoning, and bay leaves; deglaze the pot.
  7. Return beef to the pot and bring to a gentle boil. Reduce heat, cover, and simmer for one hour.
  8. Add diced potatoes and sliced carrots; simmer for another hour until tender.
  9. Remove bay leaves and adjust seasoning before serving hot.
