- 2 pounds cubed beef chuck
- 2 tablespoons olive oil
- 1 medium onion
- 3 sticks celery
- 6 cloves garlic
- 1 cup dry red wine
- 3 cups beef broth
- 1 pound Yukon Gold potatoes
- 4 medium carrots
- Salt & pepper to taste
Instructions
- Prep all ingredients; chop vegetables just before cooking.
- Dredge cubed beef in flour and shake off excess.
- In a Dutch oven, heat olive oil over medium-high heat and sear beef in batches until browned. Set aside.
- Sauté chopped onions and celery in the same pot until softened.
- Stir in minced garlic and tomato paste; cook for 1–2 minutes.
- Add red wine, broth, Worcestershire sauce, Italian seasoning, and bay leaves; deglaze the pot.
- Return beef to the pot and bring to a gentle boil. Reduce heat, cover, and simmer for one hour.
- Add diced potatoes and sliced carrots; simmer for another hour until tender.
- Remove bay leaves and adjust seasoning before serving hot.
