Ingredients
- 200 g unsalted butter (softened)
- 200 g light brown sugar
- 4 large eggs
- 100 g smooth Biscoff spread
- 200 g self-raising flour
- 125 g unsalted butter (for buttercream)
- 250 g icing sugar
- 165 g smooth Biscoff spread (for buttercream)
- Milk (1-2 tbsp for consistency)
- 9 Lotus Biscoff biscuits (for decoration)
Instructions
- Preheat the oven to 160C Fan/180C/350F/Gas Mark 4 and prepare a greased and lined 2lb loaf tin.
- Using an electric mixer, beat together the softened butter, Biscoff spread, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing until fully incorporated.
- Gently fold in the self-raising flour until just combined.
- Pour the batter into the prepared loaf tin and bake for 1 hour and 15 minutes or until a skewer comes out clean.
- For the buttercream, mix softened butter with icing sugar until combined; then add Biscoff spread and milk for desired consistency.
- Once cooled, frost the cake with buttercream and top with Lotus biscuits.
