  • 200 g unsalted butter (softened)
  • 200 g light brown sugar
  • 4 large eggs
  • 100 g smooth Biscoff spread
  • 200 g self-raising flour
  • 125 g unsalted butter (for buttercream)
  • 250 g icing sugar
  • 165 g smooth Biscoff spread (for buttercream)
  • Milk (1-2 tbsp for consistency)
  • 9 Lotus Biscoff biscuits (for decoration)

Instructions

  1. Preheat the oven to 160C Fan/180C/350F/Gas Mark 4 and prepare a greased and lined 2lb loaf tin.
  2. Using an electric mixer, beat together the softened butter, Biscoff spread, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing until fully incorporated.
  4. Gently fold in the self-raising flour until just combined.
  5. Pour the batter into the prepared loaf tin and bake for 1 hour and 15 minutes or until a skewer comes out clean.
  6. For the buttercream, mix softened butter with icing sugar until combined; then add Biscoff spread and milk for desired consistency.
  7. Once cooled, frost the cake with buttercream and top with Lotus biscuits.
