  • 6 cups spring mix lettuce
  • 1 cup fresh blackberries
  • 1 medium avocado, sliced
  • ¼ cup red onion, sliced
  • ¼ cup chopped walnuts
  • ½ cup fresh blackberries
  • 2 teaspoons Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Cook the chicken in a cast iron skillet over medium-high heat until fully cooked. Let it rest before slicing.
  2. In a large bowl, add spring mix lettuce and top with blackberries, avocado, red onion, and walnuts.
  3. For the dressing: mash additional blackberries in a bowl and whisk together Dijon mustard, balsamic vinegar, olive oil, honey, soy sauce, salt, and pepper.
