  • 1 cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened)
  • 3 cups blueberries (fresh or frozen)
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • the zest of one lemon
  • 1 cup granulated sugar for filling
  • zest of one lemon for filling
  • 2 large eggs
  • 5 ounces yogurt or sour cream
  • 2 teaspoons fresh lemon juice
  • ¼ teaspoon salt for filling
  • ½ cup all-purpose flour for filling

Instructions

  1. Preheat oven to 350ºF (177ºC) and line an 8” x 8” or 9” x 9” baking pan with foil.
  2. Prepare the crust by mixing melted butter, sugar, lemon zest, flour, and salt until crumbly. Press into the bottom of the prepared pan.
  3. For the filling, beat softened cream cheese and sugar until smooth. Mix in eggs, yogurt, lemon juice, flour, and salt until combined. Fold in blueberries.
  4. Pour filling over the crust and bake for approximately 35-40 minutes until set. Allow to cool completely before cutting into bars.
