Ingredients
- 1 cup unsalted butter (melted)
- ½ cup granulated sugar
- 2 cups all-purpose flour
- 8 ounces cream cheese (softened)
- 3 cups blueberries (fresh or frozen)
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- the zest of one lemon
- 1 cup granulated sugar for filling
- zest of one lemon for filling
- 2 large eggs
- 5 ounces yogurt or sour cream
- 2 teaspoons fresh lemon juice
- ¼ teaspoon salt for filling
- ½ cup all-purpose flour for filling
Instructions
- Preheat oven to 350ºF (177ºC) and line an 8” x 8” or 9” x 9” baking pan with foil.
- Prepare the crust by mixing melted butter, sugar, lemon zest, flour, and salt until crumbly. Press into the bottom of the prepared pan.
- For the filling, beat softened cream cheese and sugar until smooth. Mix in eggs, yogurt, lemon juice, flour, and salt until combined. Fold in blueberries.
- Pour filling over the crust and bake for approximately 35-40 minutes until set. Allow to cool completely before cutting into bars.
