  • 120 grams heavy cream
  • 380 grams sugar
  • 285 grams corn syrup
  • 113 grams butter
  • 2 grams salt
  • 8 ounces bakers chocolate, unsweetened
  • 340 grams graham cracker crumbs
  • 300 grams flour
  • 150 grams brown sugar
  • 3 grams salt
  • 170 grams butter, cold, cut into small cubes
  • 30 grams unflavored gelatin
  • 120 grams cold water
  • 380 grams sugar
  • 285 grams corn syrup
  • 180 grams honey
  • 150 grams water
  • 10 grams vanilla
  • 300 grams chocolate or candy melts
  • 3 lbs dark chocolate, tempered

Instructions

  1. Grease a baking dish or line it with parchment paper.
  2. Combine graham cracker crumbs, flour, brown sugar, and salt in a bowl; add cold butter and mix until crumbly. Press into the bottom of the prepared dish.
  3. In a saucepan over medium heat, melt together evaporated milk, heavy cream, sugar, corn syrup, butter, and salt until smooth. Stir in unsweetened chocolate until melted.
  4. Pour the chocolate caramel mixture over the graham cracker base and spread evenly.
  5. Dissolve gelatin in cold water; in another saucepan, combine sugar, corn syrup, honey, water, and vanilla. Boil until dissolved; cool slightly before adding gelatin mixture. Beat until fluffy.
  6. Spread marshmallow topping over the chocolate layer. Melt dark chocolate or candy melts and drizzle over the top.
  7. Refrigerate for 2-4 hours until set before cutting into squares.
