Ingredients
- ¾ cup peach preserves
- ¼ cup bourbon
- 4 salmon fillets (about 1½ pounds)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons soy sauce
- 2 teaspoons apple cider vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons minced garlic
- Salt and pepper to taste
- Fresh peaches for garnish
Instructions
- In a mixing bowl, combine peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Set aside half of the marinade.
- Place the salmon fillets in a resealable bag and pour in the remaining marinade. Seal and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the marinated salmon skin-side up for about 2-3 minutes until golden brown.
- Flip the salmon skin-side down, add sliced peaches around it, and cook for another 2-3 minutes.
- Pour the reserved marinade over the salmon and peaches.
- Bake in the preheated oven for 12-15 minutes or until the salmon reaches an internal temperature of 145°F.
