Ingredients

  • 1 cup white onions (chopped)
  • 1 clove garlic (finely diced)
  • 3 heaping cups broccoli (finely chopped)
  • 1 ½ heaping cups julienned carrots
  • ¼ cup vegan butter
  • ½ cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt vegan butter in a large pot over medium heat.
  2. Sauté onions and garlic for about 5–7 minutes until translucent.
  3. Stir in flour to form a roux.
  4. Gradually whisk in vegetable broth and rice milk until blended.
  5. Bring to a boil; then reduce heat and add broccoli and carrots. Cook until tender (about 10 minutes).
  6. Stir in vegan cheese until melted.
  7. Blend part of the soup for creaminess and return it to the pot.
  8. Season with salt and pepper to taste.
