Description

  • 1 lb boneless skinless chicken breast
  • ½ cup blue cheese dressing (or ranch)
  • 2 tablespoons butter
  • ½ cup yellow onion, diced
  • 1 stick celery, diced
  • 3 cloves garlic, minced
  • 14.5 oz diced tomatoes (undrained)
  • 4 cups chicken broth
  • 1 lb penne pasta
  • ½ cup buffalo sauce
  • 8 oz cream cheese (softened)
  • 1.5 cups cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter. Cook the chicken breast until golden brown and fully cooked through, then shred or chop.
  2. In the same skillet, melt the remaining butter and sauté the onions, celery, and garlic until tender.
  3. Add shredded chicken back to the skillet along with diced tomatoes, chicken broth, penne pasta, and buffalo sauce. Bring to a boil then reduce heat and simmer for about 12 minutes until pasta is al dente.
  4. Stir in cream cheese cubes and both shredded cheeses until melted and creamy.
  5. Serve warm garnished with optional red pepper flakes.
