- 1 lb boneless skinless chicken breast
- ½ cup blue cheese dressing (or ranch)
- 2 tablespoons butter
- ½ cup yellow onion, diced
- 1 stick celery, diced
- 3 cloves garlic, minced
- 14.5 oz diced tomatoes (undrained)
- 4 cups chicken broth
- 1 lb penne pasta
- ½ cup buffalo sauce
- 8 oz cream cheese (softened)
- 1.5 cups cheddar cheese (shredded)
- 1 cup mozzarella cheese (shredded)
Instructions
- In a large skillet over medium heat, melt 1 tablespoon of butter. Cook the chicken breast until golden brown and fully cooked through, then shred or chop.
- In the same skillet, melt the remaining butter and sauté the onions, celery, and garlic until tender.
- Add shredded chicken back to the skillet along with diced tomatoes, chicken broth, penne pasta, and buffalo sauce. Bring to a boil then reduce heat and simmer for about 12 minutes until pasta is al dente.
- Stir in cream cheese cubes and both shredded cheeses until melted and creamy.
- Serve warm garnished with optional red pepper flakes.
