  • pinch of ground nutmeg
  • 2 cups shredded carrots
  • 1 cup shredded zucchini
  • 1 cup diced (peeled apple) (Granny Smith or Fuji)
  • ½ cup pecans (chopped)
  • ½ cup cream cheese (softened)
  • ¼ cup butter (softened)
  • 23 cups powdered sugar
  • 13 tbsp orange juice as needed

Instructions

  1. Preheat oven to 350°F and grease two 8×4 inch loaf pans.
  2. Squeeze excess moisture from shredded zucchini using a kitchen towel.
  3. Whisk together dry ingredients in a large bowl: flour, salt, baking powder, baking soda, and spices.
  4. In another bowl, mix melted butter and sugar until well combined; add eggs, orange juice, and vanilla extract.
  5. Fold dry ingredients into the wet mixture gently before adding shredded carrots, zucchini, diced apple, and chopped pecans.
  6. Divide batter between prepared pans and bake for 55 to 60 minutes or until golden brown.
