  • 1 cup light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • For the cream cheese layer: 4 ounces cream cheese, 1/4 cup granulated sugar, 1 large egg yolk, 3/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar. Beat in the egg and vanilla until smooth.
  3. In another bowl, mix flour, cinnamon, baking powder, and salt. Gradually add this dry mixture to the wet ingredients along with shredded carrots.
  4. For the cream cheese layer, beat cream cheese and granulated sugar until smooth. Mix in egg yolk and vanilla.
  5. Pour half of the carrot batter into the pan; spread evenly. Add the cream cheese mixture on top, then spoon dollops of remaining batter over it and swirl gently.
  6. Bake for about 40 minutes or until a toothpick comes out clean. Let cool before cutting into squares.
