  • 2 medium eggplants
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Fresh basil (or dried)

  • Olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants into 1/4-inch rounds, salt both sides, and let sit for 10-15 minutes to draw out moisture. Pat dry.
  3. Brush eggplant slices with olive oil and roast for 15-20 minutes until tender and lightly browned.
  4. In a mixing bowl, combine ricotta, mozzarella, Parmesan, egg, basil, garlic powder, oregano, salt, and pepper.
  5. Spoon the cheese mixture onto one end of each eggplant slice and roll up.
