  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel diced tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese (any variety)

Instructions

  1. In a large skillet over medium-high heat, warm olive oil and add ground beef and onion. Cook until the beef is browned (8–10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add beef broth, Rotel, and tomato paste. Mix well and bring to a boil.
  4. Stir in the rice; return to a boil then cover and reduce heat to low.
  5. Simmer for about 15 minutes until rice is tender.
  6. Top with shredded cheese; cover again until melted (about 5 minutes).
  7. Serve hot with your favorite toppings.
