  • 1 cup matchstick carrots
  • 1 cup diced celery
  • 4 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 1 (12 oz) can evaporated milk
  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon baking powder

Instructions

  1. In a large pot, melt the butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes until softened. Stir in garlic and cook for an additional minute.
  2. Add flour to the pot, stirring constantly for one minute. Gradually add evaporated milk and chicken stock while stirring to prevent lumps.
  3. If using raw chicken, add it along with an extra cup of broth and simmer for about 20 minutes until cooked through. Shred the chicken before returning it to the pot. If using pre-cooked chicken, simply add it along with thyme, pepper, and salt; bring to a boil before reducing heat.
  4. While the mixture simmers, prepare dumplings by combining flour, baking powder, salt, pepper, melted butter, and milk in a bowl until just mixed.
  5. Drop spoonfuls of dumpling batter into the simmering broth and cook uncovered for about 15 minutes until fluffy.
