  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, finely chopped
  • 2 medium carrots, chopped
  • 3 ribs celery, chopped
  • 2 cups rotisserie chicken, shredded
  • 4 cups chicken stock
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 3/4 cup barley

Instructions

  1. Rinse and drain barley; set aside.
  2. In a large pot over medium heat, heat olive oil. Add onion and garlic; season with salt and pepper. Sauté until the onion is translucent.
  3. Stir in onion powder, garlic powder, and Italian seasoning. Then add carrots, celery, barley, and chicken; mix well.
  4. Pour in chicken stock and bring to a boil.
  5. Reduce heat to low; taste and adjust seasoning as needed. Cover and simmer for about 30 minutes until barley is tender.
  6. Taste again before serving to adjust seasoning if necessary.
