  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons fajita seasoning
  • 2 cups diced onion
  • 2 cups diced bell peppers
  • 34 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 10 oz can diced tomatoes and green chiles
  • 8 oz penne pasta
  • 1/2 teaspoon salt

Instructions

  1. Cut chicken into bite-sized pieces and season half with fajita seasoning. Heat olive oil in a large skillet over high heat. Sear chicken until browned on both sides; remove and set aside.
  2. In the same skillet, add remaining oil, onions, bell peppers, and seasoning. Sauté until slightly charred, then stir in garlic until fragrant. Remove vegetables and set aside.
  3. Combine broth, cream, tomatoes, uncooked pasta, and salt in the skillet. Bring to a boil, cover, reduce heat to medium-low, and cook for about 15 minutes until pasta is tender.
  4. Return chicken and veggies to the skillet; stir until heated through.
