- 1 pound boneless, skinless chicken breasts
- 3 tablespoons fajita seasoning
- 2 cups diced onion
- 2 cups diced bell peppers
- 3–4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 10 oz can diced tomatoes and green chiles
- 8 oz penne pasta
- 1/2 teaspoon salt
Instructions
- Cut chicken into bite-sized pieces and season half with fajita seasoning. Heat olive oil in a large skillet over high heat. Sear chicken until browned on both sides; remove and set aside.
- In the same skillet, add remaining oil, onions, bell peppers, and seasoning. Sauté until slightly charred, then stir in garlic until fragrant. Remove vegetables and set aside.
- Combine broth, cream, tomatoes, uncooked pasta, and salt in the skillet. Bring to a boil, cover, reduce heat to medium-low, and cook for about 15 minutes until pasta is tender.
- Return chicken and veggies to the skillet; stir until heated through.
