  • 1 ½ cups bell peppers (red and yellow, cut into strips)
  • 2 cups mushrooms (sliced)
  • ½ cup green onions (plus more for garnish)
  • Soy sauce
  • Olive oil
  • Oyster sauce
  • Garlic
  • Ginger
  • Honey
  • Sesame oil

Instructions

  1. Cook the noodles according to package instructions until al dente; drain and set aside.
  2. In a bowl, combine sauce ingredients: soy sauces, honey, sesame oil, garlic, ginger, and whisk together.
  3. Marinate chicken in half of the sauce for at least an hour.
  4. Heat olive oil in a large skillet over high heat; cook marinated chicken until golden brown.
  5. Add mushrooms to the skillet and sauté for a few minutes before adding bell peppers and carrots; stir-fry until tender.
