- 1 1/4 lbs chicken breast
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup all-purpose flour
- 2 Tbsp olive oil
- 1 Tbsp unsalted butter
- 8 oz brown button mushrooms
- 3/4 cup dry marsala wine
- 3/4 cup reduced-sodium chicken stock
- 1/2 cup heavy whipping cream
- Fresh parsley for garnish
Instructions
- Cut chicken breasts in half lengthwise and pound to about 1/3" thickness. Season with salt and pepper, then dredge in flour.
- Heat olive oil and butter in a large pan over medium heat. Cook chicken until golden brown and cooked through (about 3-4 minutes per side). Set aside.
- In the same pan, sauté mushrooms until golden brown. Add onion powder and garlic; cook until fragrant.
- Pour in marsala wine, scraping any browned bits from the pan, then add chicken stock and cream. Simmer until thickened.
- Return chicken to the pan, spoon sauce over it, and warm through.
