Ingredients

  • 1 1/4 lbs chicken breast
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 2 Tbsp olive oil
  • 1 Tbsp unsalted butter
  • 8 oz brown button mushrooms
  • 3/4 cup dry marsala wine
  • 3/4 cup reduced-sodium chicken stock
  • 1/2 cup heavy whipping cream
  • Fresh parsley for garnish

Instructions

  1. Cut chicken breasts in half lengthwise and pound to about 1/3" thickness. Season with salt and pepper, then dredge in flour.
  2. Heat olive oil and butter in a large pan over medium heat. Cook chicken until golden brown and cooked through (about 3-4 minutes per side). Set aside.
  3. In the same pan, sauté mushrooms until golden brown. Add onion powder and garlic; cook until fragrant.
  4. Pour in marsala wine, scraping any browned bits from the pan, then add chicken stock and cream. Simmer until thickened.
  5. Return chicken to the pan, spoon sauce over it, and warm through.
