  • 1 ½ pounds chicken breasts (sliced)
  • 6 tablespoons brown sugar
  • 6 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons chili garlic sauce or sriracha
  • 3 eggs (beaten)
  • 1 red bell pepper (sliced)
  • 2 cups bean sprouts
  • 1 cup matchstick carrots
  • 2 green onions (chopped)
  • ¼ cup peanuts (chopped)
  • Cilantro

Instructions

  1. Prepare the sauce by mixing brown sugar, soy sauce, rice vinegar, chili garlic sauce, and lime juice in a bowl; set aside.
  2. Cook the Thai rice noodles according to package instructions until al dente; drain.
  3. In a non-stick skillet over medium-high heat, add oil and cook sliced chicken for 4-6 minutes until done; remove from pan.
  4. Scramble beaten eggs in the same skillet until fully cooked; remove from pan.
  5. Sauté sliced bell pepper for 1-2 minutes. Add bean sprouts and carrots; cook until tender.
  6. Combine drained noodles, cooked chicken, scrambled eggs, and prepared sauce in the skillet; toss for an additional minute over heat.
  7. Serve hot with chopped peanuts and cilantro as garnish.
