  • 1/2 cup egg substitute
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 5 tablespoons lemon juice
  • 3 garlic cloves, minced

  • 2 tablespoons butter

Instructions

  1. Flatten the chicken to 1/4-inch thickness.
  2. In one dish, mix egg substitute, wine or broth, lemon juice, minced garlic, and hot pepper sauce.
  3. In another dish, combine flour, Parmesan cheese, parsley, and salt.
  4. Dip chicken in flour mixture, then egg mixture, and back into the flour mixture.
  5. Cook in a nonstick skillet over medium-high heat with olive oil until golden brown.
  6. Make the lemon sauce in the same skillet using butter, remaining wine or broth, and lemon juice; simmer until reduced.
  7. Drizzle the sauce over chicken before serving.
