- 3 oz cooking oil (canola or vegetable)
- 2 large eggs
- 1 cup sugar
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1 1/4 cups chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×4 inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Set aside.
- In a large bowl, mix oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined.
- Gradually add dry ingredients to wet mixture and stir gently until just combined. Fold in 1 cup of chocolate chips.
- Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top. Bake for 50–60 minutes or until a toothpick comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
