  • 100 grams almond flour
  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup butter
  • 1/3 cup peanut butter
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F and line two baking sheets with parchment paper.
  2. In a bowl over simmering water, whisk together egg whites and granulated sugar until the sugar is dissolved.
  3. Transfer to a stand mixer and whip until stiff peaks form.
  4. Sift together almond flour, cocoa powder, and powdered sugar into the meringue.
  5. Gently fold until the batter flows smoothly.
  6. Pipe small circles onto prepared sheets and let sit for about 30 minutes.
  7. Bake for 13 minutes, rotating halfway through.
