  • 1/3 cup white sugar
  • 2/3 cup brown sugar
  • 3 eggs
  • 1/4 tsp peppermint extract
  • 1 1/3 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp espresso powder
  • 3/4 cup milk (whole or 2%)
  • 1/2 cup dark chocolate chips
  • Pinch salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream softened butter with white and brown sugars using an electric hand mixer until fluffy.
  3. Mix in cocoa powder, baking powder, baking soda, espresso powder, and salt until well combined.
  4. Beat in eggs one at a time along with peppermint extract.
  5. Gradually add flour and milk alternately until smooth.
  6. Fold in dark chocolate chips gently using a rubber spatula.
  7. Pour batter into a greased loaf pan lined with parchment paper.
  8. Bake for 50–60 minutes until a toothpick inserted comes out clean.
  9. Let cool before frosting with icing made from powdered sugar, milk, peppermint extract, and Greek yogurt.
