  • 5.2 oz dry noodles of your choice
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic (minced)
  • 1/2 small shallot or red onion
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup olive oil
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook the dry noodles according to package instructions until slightly undercooked. Rinse under cold water and set aside.
  2. In a large bowl, combine chopped cilantro, minced garlic, shallot, curry powder, sugar, and chili powder.
  3. Heat olive oil in a pot over medium heat until hot. Pour over the herb mixture and mix well.
  4. Stir in vegetarian mushroom oyster sauce, dark soy sauce, and lime juice.
  5. Add cooked noodles to the bowl and mix thoroughly to coat.
  6. Serve immediately garnished with chili oil if desired.
