  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
  • For the cinnamon swirl: 4 tbsp melted vegan butter, 1/3 cup light brown sugar, 2 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine mashed bananas and melted vegan butter. Stir in maple syrup, almond milk, and vanilla extract until smooth.
  3. In another bowl, mix flour, baking powder, baking soda, cinnamon, and salt. Gradually add dry ingredients to wet mixture using a rubber spatula until just combined.
  4. For the cinnamon swirl, mix melted vegan butter with brown sugar and cinnamon in a small bowl.
  5. Pour half of the batter into a greased loaf pan. Spread half of the cinnamon filling over it, then add the remaining batter and top with the rest of the filling. Swirl gently with a knife.
  6. Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
