Ingredients
- 3 overripe mashed bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 tsp vanilla extract
- 1 1/2 cups gluten-free all-purpose flour
- 1 cup old-fashioned rolled oats
- For the cinnamon swirl: 4 tbsp melted vegan butter, 1/3 cup light brown sugar, 2 tbsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine mashed bananas and melted vegan butter. Stir in maple syrup, almond milk, and vanilla extract until smooth.
- In another bowl, mix flour, baking powder, baking soda, cinnamon, and salt. Gradually add dry ingredients to wet mixture using a rubber spatula until just combined.
- For the cinnamon swirl, mix melted vegan butter with brown sugar and cinnamon in a small bowl.
- Pour half of the batter into a greased loaf pan. Spread half of the cinnamon filling over it, then add the remaining batter and top with the rest of the filling. Swirl gently with a knife.
- Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
