Ingredients

  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper
  • 1 pint cherry tomatoes (halved)
  • 1 cup diced English cucumber
  • ½ cup finely diced red onions
  • 1/3 cup roughly chopped fresh cilantro
  • ¾ cup fresh Cotija cheese
  • Dressing: avocado oil, lime juice, red wine vinegar, honey, Dijon mustard, spices

Instructions

  1. Shuck the corn and remove husks.
  2. Boil water in a pot and cook the corn for about 5 minutes until tender. Let cool and cut kernels off the cob.
  3. Chop bell peppers, cucumber, cherry tomatoes, red onions, and cilantro; add to a mixing bowl with cooled corn.
  4. In another bowl, whisk together dressing ingredients until well combined.
  5. Pour dressing over the corn mixture and toss gently until coated.
  6. Add Cotija cheese just before serving.
