Ingredients
- 4 large ears of fresh corn
- 1 ½ cups diced bell pepper
- 1 pint cherry tomatoes (halved)
- 1 cup diced English cucumber
- ½ cup finely diced red onions
- 1/3 cup roughly chopped fresh cilantro
- ¾ cup fresh Cotija cheese
- Dressing: avocado oil, lime juice, red wine vinegar, honey, Dijon mustard, spices
Instructions
- Shuck the corn and remove husks.
- Boil water in a pot and cook the corn for about 5 minutes until tender. Let cool and cut kernels off the cob.
- Chop bell peppers, cucumber, cherry tomatoes, red onions, and cilantro; add to a mixing bowl with cooled corn.
