  • 9 large eggs
  • 1/3 cup feta cheese
  • 1 cup baby spinach
  • 1/2 cup sundried tomatoes (dry, cut into strips)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/3 cup grated cheddar cheese (or mozzarella)

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a 12-inch pie plate skillet with olive oil.
  2. Roughly chop the baby spinach and set aside.
  3. In a large mixing bowl, whisk together eggs, cottage cheese, feta cheese, garlic powder, salt, pepper, oregano, and grated cheddar until well blended.
  4. Stir in sundried tomatoes and chopped spinach until evenly distributed.
  5. Pour the mixture into the prepared pie plate.
