  • 300 g pasta (penne or rotini recommended)
  • 1 tablespoon olive oil
  • 30 g unsalted butter
  • 450 g chicken breast fillets
  • 1 medium shallot, diced
  • 2 large garlic cloves
  • 1 tablespoon tomato paste
  • 250 ml chicken stock
  • 150 g light cream cheese
  • 2 tablespoons buffalo wing sauce
  • 2 tablespoons ranch sauce
  • 100 g cheddar cheese, grated
  • 100 g Monterey Jack cheese, grated
  • Salt and pepper to taste

Instructions

  1. Cook pasta in a large pot of boiling water until one minute less than package instructions; reserve a cup of pasta water before draining.
  2. In a large pan or Dutch oven, heat olive oil and melt butter over medium heat. Add chicken pieces; cook for about 6-7 minutes until cooked through.
  3. Stir in shallot and minced garlic; cook until fragrant (1-2 minutes). Add tomato paste and chicken stock; simmer.
  4. Mix in cream cheese until melted; add buffalo and ranch sauces.
  5. Combine with cooked pasta, using reserved pasta water as needed for consistency.
  6. Stir in cheddar and Monterey Jack until melted; season to taste.
