Ingredients
- 300 g pasta (penne or rotini recommended)
- 1 tablespoon olive oil
- 30 g unsalted butter
- 450 g chicken breast fillets
- 1 medium shallot, diced
- 2 large garlic cloves
- 1 tablespoon tomato paste
- 250 ml chicken stock
- 150 g light cream cheese
- 2 tablespoons buffalo wing sauce
- 2 tablespoons ranch sauce
- 100 g cheddar cheese, grated
- 100 g Monterey Jack cheese, grated
- Salt and pepper to taste
Instructions
- Cook pasta in a large pot of boiling water until one minute less than package instructions; reserve a cup of pasta water before draining.
- In a large pan or Dutch oven, heat olive oil and melt butter over medium heat. Add chicken pieces; cook for about 6-7 minutes until cooked through.
