  • 1 small white onion (chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons Cajun seasoning
  • 5 cups chicken stock
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup heavy cream
  • 1 cup ditalini pasta (or other small pasta)
  • 1 pound chicken breasts
  • Grated parmesan cheese, salt, pepper, and sliced green onions for garnish

Instructions

  1. Melt butter in a large Dutch oven over medium-high heat. Add chopped onion and minced garlic; sauté for about 5 minutes until fragrant. Stir in one tablespoon of Cajun seasoning.
  2. Remove from heat and add chicken stock, diced tomatoes, and heavy cream. Return to heat, bring to a boil, then reduce to a simmer.
  3. Stir in dry pasta and cook for approximately 10 minutes, stirring frequently.
  4. Season chicken with remaining Cajun seasoning and sear in a small skillet with oil until fully cooked. Let cool before chopping into pieces.
  5. Lower the heat under the Dutch oven; stir in grated parmesan until melted. Add chopped chicken and let simmer for an additional few minutes.
  6. Adjust seasoning as needed and serve garnished with green onions.
