- 1 lb shrimp, deveined and cleaned
- 8 oz linguine
- 1 cup half and half
- 2 cloves garlic, minced
- 1 roma tomato, diced
- 1/4 cup parmigiano reggiano
- 1 tsp cajun seasoning
Instructions
- Dry the shrimp with a paper towel and season with salt, pepper, and 1/2 tsp cajun seasoning.
- Boil water in a pot and cook the linguine according to package instructions until al dente; drain.
- In a large pan over medium heat, melt oil and butter together. Add the shrimp in an even layer; after 2 minutes, add garlic and cook until shrimp turn pink (3-5 minutes).
- Pour half and half and parmigiano reggiano into the pan; whisk constantly for about 2 minutes until slightly thickened.
- Stir in cooked linguine, diced tomato, parsley, and the remaining cajun seasoning. Optionally add lemon juice.
- Serve hot, garnished with extra parsley if desired.
