  • 6 skinless, boneless chicken thighs
  • 8 oz cremini mushrooms, sliced
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup shredded parmesan cheese
  • 1 cup spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Cook chicken thighs for 4-5 minutes on each side until golden brown. Season with salt and pepper. Remove and set aside.
  2. In the same skillet, add sliced mushrooms and sauté until soft. Remove and set aside.
  3. Melt butter in the skillet, add minced garlic, then stir in heavy cream, chicken broth, garlic powder, and parmesan cheese. Simmer for about 2 minutes until creamy.
  4. Return chicken and mushrooms to the skillet and simmer together for an additional 5-10 minutes. Stir in spinach until wilted.
