Instructions
- In a large pot, melt the butter over medium heat. Add carrots, celery, and onion; cook until tender (7-10 minutes).
- Stir in flour and cook for an additional 2-3 minutes.
- Gradually add chicken broth while stirring; bring to a boil. Add bouillon base and black pepper.
- Submerge chicken breasts in the pot, cover, reduce heat to medium-low, and simmer for about 15 minutes until cooked through (165°F). Remove chicken and shred.
- Add egg noodles to the pot; cook until tender (7-10 minutes). Return shredded chicken to the pot.
- Whisk cream of chicken soup with water/milk until smooth; stir into the pot until creamy. Season to taste.
- Serve hot, garnished with parsley if desired.
