  • 1 ½ cups chopped celery
  • 1 cup chopped onion
  • ¼ cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1 teaspoon chicken bouillon base
  • ½ teaspoon black pepper
  • 1 ½ pounds boneless skinless chicken breasts
  • 4 ounces wide egg noodles
  • 2 cans cream of chicken soup (10.5 ounces each)
  • ¼ cup water or milk
  • Salt to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add carrots, celery, and onion; cook until tender (7-10 minutes).
  2. Stir in flour and cook for an additional 2-3 minutes.
  3. Gradually add chicken broth while stirring; bring to a boil. Add bouillon base and black pepper.
  4. Submerge chicken breasts in the pot, cover, reduce heat to medium-low, and simmer for about 15 minutes until cooked through (165°F). Remove chicken and shred.
  5. Add egg noodles to the pot; cook until tender (7-10 minutes). Return shredded chicken to the pot.
  6. Whisk cream of chicken soup with water/milk until smooth; stir into the pot until creamy. Season to taste.
  7. Serve hot, garnished with parsley if desired.
