  • 2 Tablespoons butter
  • 1 small yellow onion (diced)
  • 1 jalapeno pepper (diced)
  • 3 cloves garlic (diced)
  • 1 Tablespoon tomato paste
  • 1 can corn (15 oz., drained)
  • 1 can Rotel diced tomatoes with green chilies (10 oz.)
  • 1 can black beans (15 oz., drained and rinsed)
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts (or 2 cups shredded chicken)
  • 1 oz. packet taco seasoning (about 3 Tbsp.)
  • 1½ cups cheddar cheese (shredded)
  • ⅓ cup cream cheese (softened)

Instructions

  1. In a large pot over medium heat, melt the butter. Sauté the onions and jalapenos for about 5–6 minutes until softened. Add the garlic and cook for another minute.
  2. Stir in all remaining ingredients except for the cheddar cheese and cream cheese. Bring to a gentle simmer.
  3. Cook for 20–25 minutes, then shred the chicken into bite-sized pieces after checking it's cooked through.
  4. Reduce heat to low and mix in the cheddar and cream cheese until melted and smooth.
  5. Adjust seasoning to taste before serving hot.
