- 6–8 cups chicken broth (I recommend starting with 6 cups.)
- 6 oz pasta (I used Italian small shells.)
- 1 cup heavy whipping cream
- 1/2–1 cup grated parmesan reggiano cheese
- 2 1/2–3 cups fresh spinach
Instructions
- Heat olive oil in a large pot over medium-high heat. Add diced chicken seasoned with Italian seasoning and cook until browned.
- Stir in diced onions, carrots, celery, sundried tomatoes, and minced garlic; cook until vegetables are translucent.
- Sprinkle flour over the mixture and stir to combine. Optionally add tomato paste for extra flavor.
- Gradually whisk in chicken broth, ensuring there are no lumps.
- Bring to a boil and add pasta along with more Italian seasoning; reduce heat to low and simmer until chicken is cooked through.
- Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional five minutes before serving.
