  • 8 ounces uncooked fusilli or penne pasta
  • 2 cups packed baby spinach
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 1/2 cups low sodium chicken broth
  • 2 ounces low fat cream cheese
  • 1 cup whole milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder

Instructions

  1. Sauté chicken in olive oil over medium-high heat until cooked through. Remove and set aside.
  2. In the same pot, cook shallots, sun-dried tomatoes, and garlic for 2 minutes. Add chicken broth and bring to a boil.
  3. Add uncooked pasta and cook until al dente (15-20 minutes). Stir in spinach until wilted.
