  • 14.5 ounce can of petite diced tomatoes (drained)
  • 1 tablespoon tomato paste
  • 2 tablespoons granulated sugar
  • 1/2 cup plain 2% or full fat Greek yogurt
  • 1/4 cup sour cream
  • Salt and pepper (to taste)
  • ½ cup grated parmesan cheese
  • 1 1/2 cups baby spinach
  • 1 cup reserved pasta water
  • Crushed red pepper flakes (optional)

Instructions

  1. Cook pasta according to package directions in a large stockpot. Drain, reserving 1 cup of pasta water.
  2. In a bowl, mix Greek yogurt and sour cream until smooth; set aside.
  3. Heat olive oil in a skillet over medium-high heat; sauté garlic and sun-dried tomatoes for 2 minutes.
  4. Stir in diced tomatoes, tomato paste, and sugar; reduce heat to medium-low.
  5. Gradually whisk in the yogurt-sour cream mixture, simmering for 5–7 minutes until thickened.
  6. Season with salt and pepper; add parmesan cheese and spinach until wilted.
  7. Toss in cooked fettuccine, adjusting consistency with reserved pasta water as necessary.
  8. Serve warm, garnished with red pepper flakes if desired.
