- 1 cup snap peas, trimmed
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- Salt and black pepper, to taste
- Sesame seeds, for garnish (optional)
Instructions
- Rinse 1 cup of long-grain rice under cold water until clear. Cook in 2 cups vegetable broth on low heat for 15-18 minutes, then let sit covered for 5 minutes.
- While rice cooks, slice shiitake mushrooms, dice carrot, trim snap peas, and tear kale into pieces.
- In a large skillet over medium-high heat, sauté mushrooms in vegetable oil until golden brown. Remove and set aside.
- Sauté kale in the same skillet until bright green and slightly crispy; remove.
- Cook diced carrot and snap peas for 3-4 minutes; add minced garlic and cook until fragrant.
- Combine cooked rice with sautéed veggies, soy sauce, sesame oil, salt, and pepper; cook for another 2-3 minutes until heated through.
- Serve hot, garnished with sesame seeds if desired.
