Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 can (14 ounces) chicken broth
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 12 ounces penne pasta
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts in the crock pot and sprinkle with Cajun seasoning.
  2. Add chicken broth, garlic, onion, and bell peppers.
  3. Cook on low for 6 hours or high for 3-4 hours until chicken is tender.
  4. Shred the chicken with forks and return to the crock pot.
  5. Stir in heavy cream, Parmesan cheese, and uncooked penne pasta.
  6. Cover and cook on high for an additional 30 minutes or until pasta is tender.
