Ingredients
- 1 ½ lb chicken breasts
- 1 cup heavy cream
- 4 oz cream cheese (softened)
- ¾ cup chicken broth
- ¾ cup grated parmesan cheese
- 8 oz sliced mushrooms
- 3 oz baby spinach
- ½ lb short pasta (like penne or rotini)
- 2–3 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp sea salt
- ½ tsp pepper
- ½ cup Italian herb sun-dried tomatoes (excess oil removed)
- 1 tsp chopped fresh parsley
- 3 garlic cloves (minced)
- ¼ cup chopped basil
Instructions
- Place chicken in the bottom of a greased crock pot. Season with Italian seasoning, garlic powder, salt, and pepper.
- Layer mushrooms and sun-dried tomatoes on top of the chicken.
- In a bowl, mix heavy cream, cream cheese, and chicken broth; pour over chicken and veggies.
- Cook on LOW for 3–4 hours until chicken reaches an internal temperature of 165°F.
- Shred the chicken and stir in spinach and cooked pasta until well combined.
- Serve hot, garnished with fresh basil and extra parmesan.
